Lemon Drizzle cake

Ingredients

4oz butter
6oz self raising flour
6oz sugar
8oz icing sugar
2 eggs
60ml milk
Rind of 1 lemon

Method

Pre-heat oven to 180 degrees C
Line a 1lb loaf tin with greaseproof paper and mix together all the ingredients.
Put mix into the tin and make a well in the centre.
Bake for 1 hour or until risen and golden.
Mix together the icing sugar and lemon juice. Pour over the warm cake.
Sprinkle with sugar and leave to cool in the tin.
